Carrots Rich in Beta-Carotene Among Green and Yellow Vegetables
Carrots are rich in beta-carotene and dietary fiber, and consuming them regularly is beneficial for eye health, blood vessels, and anti-aging. Carrots are among the foods with high beta-carotene content among green and yellow vegetables. According to the National Standard Food Composition Table, 100g of boiled carrots contains 3582μg of beta-carotene. In comparison, 100g of red bell peppers, known for their high beta-carotene content, contains 918μg, while red paprika contains 338μg.
When beta-carotene enters the body, it is converted into vitamin A, which protects the eyes. It also has antioxidant effects. It prevents damage to cells and DNA, reducing inflammation in the body and boosting immunity. At the same time, it suppresses aging and reduces the risk of cancer.
Additionally, carrots are rich in dietary fiber. Dietary fiber helps eliminate waste from the body and promotes intestinal movement, preventing constipation. Improved gut health positively affects skin, immunity, and digestive ability. The gut contains a diverse microbiome consisting of 200 different types of microorganisms. A healthy gut with a high number of beneficial bacteria enhances digestive function and overall health.
Excessive Intake of Beta-Carotene is Not Recommended
However, beta-carotene is soluble in fat rather than water. Heating carrots with olive oil and then making them into juice increases absorption rates. Research shows that the absorption rate of beta-carotene when eaten raw is about 10%, but it can increase to over 60% when cooked.
Even though carrot juice is good for the body, excessive consumption can lead to side effects such as abdominal bloating, gas, and diarrhea. Carotenemia, where the skin turns yellow, can also occur. Carotenemia is a condition where the concentration of beta-carotene in the blood increases, leading to pigmentation in the skin. Fortunately, aside from visible skin changes, there are no significant health risks, and reducing beta-carotene intake will return the skin color to normal.
