When you slice into an onion, the sting in your eyes feels almost instantaneous. This common kitchen grievance is caused by the release of propanethial S-oxide, a volatile chemical that triggers involuntary tearing. However, new research suggests that avoiding the "onion cry" may come down to your choice of cutlery and your pace at the cutting board.

According to a study conducted by researchers at Cornell University and published in the Proceedings of the National Academy of Sciences (PNAS), the most effective way to keep your eyes dry is to use a sharper blade and a slower cutting motion. The study found that the mechanical physics of the slice directly correlates to how much of the irritating chemical is atomized into the air.

To reach these conclusions, researchers utilized a specialized miniature guillotine equipped with high-resolution cameras and precision sensors. This setup allowed them to track the behavior of microscopic liquid droplets sprayed during the slicing process, comparing how blade sharpness, cutting speed, and physical force affected the outcome.

The analysis revealed that each layer of an onion possesses an upper and lower skin. When a blade punctures these layers, two distinct physical reactions occur: an immediate burst of droplets and a slower seepage of fluid. The intensity of this "spray" is largely determined by the quality of the tool.

A dull knife requires significantly more force to break through the onion's skin, which increases internal pressure and causes the onion's juices to erupt more violently. "A dull blade pressurizes the juice," the researchers explained. "If you cut faster and with more force using a dull blade, the droplets travel much farther," increasing the likelihood that they will reach the eyes of the cook.

The study also debunked a popular piece of kitchen folklore: the idea that chilling onions before slicing can prevent tears. The researchers found that an onion's starting temperature made no meaningful difference in chemical release. In fact, refrigeration was found to potentially worsen the spray.

Beyond mere comfort, the findings carry important implications for food hygiene. The researchers noted that if pathogens are present on the surface of an onion, the high-pressure spray created by a dull knife could effectively aerosolize those bacteria, encasing them in liquid droplets and spreading them across the kitchen workspace. To ensure both a tear-free experience and a safer environment, the science suggests keeping your knives honed and your tempo steady.
