While the GI of a sweet potato (61) is lower than that of a white potato (85), the preparation method matters significantly. During the roasting process, the sugar content can increase substantially. For those managing blood sugar, steamed or raw options are preferable. However, even the healthiest preparation can be undermined if eaten as a "dessert" immediately following a full meal.
The 'After-Meal' Trap
Nutritional experts use food exchange lists to help patients with diabetes manage their intake. In these terms, half of a medium sweet potato is equivalent to roughly one-third of a bowl of rice.
Eating a sweet potato as a snack or a meal replacement is effective, but consuming it immediately after a carbohydrate-heavy meal can nearly double your total intake. This often leads to a "glucose spike"—a rapid rise in blood sugar that puts a strain on insulin production.

Managing Digestion and Bloating
