If you want your vegetables to stay fresh longer, the first step is to re-evaluate your storage habits. Many people store dirt-packed green onions in the plastic bags they were purchased in or wash leafy greens like lettuce as soon as they get home. However, these common practices can actually accelerate spoilage. By following a few specific steps, you can significantly extend the life of your produce.

Storing green onions: Dirt-packed vs. chopped

If you plan to use dirt-packed green onions within a few days, refrigeration is not strictly necessary. Storing them upright with the roots facing down allows them to stay fresh for about five days. When the soil remains attached, moisture evaporates more slowly, preventing the onions from drying out.

For chopped green onions, the strategy changes. Freshness is better preserved by separating the white and green parts into different containers. Wrap the pieces in paper towels and place them in an airtight container or a zip-top bag. This method can keep green onions fresh for two weeks to a month. It is important to monitor the paper towels and replace them if they become excessively damp.

Why lettuce should be refrigerated upright and unwashed

The key to long-lasting lettuce is to avoid washing it immediately after purchase. Moisture from washing can damage the protective surface layer of the leaves, creating an environment where microorganisms and foodborne bacteria multiply. This often leads to softening or browning within just a few days.

Instead, wrap the unwashed leaves in dry paper towels, place them in a zip-top bag, and store them upright with the leaves facing upward. This method can keep lettuce fresh for up to three to four weeks. For both green onions and lettuce, storing them in the section of the refrigerator closest to 0°C is ideal, as the cold slows the respiration rate and preserves nutrients.

The right way to wash produce before consumption

Regardless of how well they are stored, vegetables must be washed thoroughly before being eaten. Rather than rinsing them immediately under a tap, it is more effective to soak them in water first. Gently swish the vegetables by hand while submerged, then perform a final rinse under running water.

For added safety, you may sanitize produce by soaking it in water diluted with a small amount of food-grade chlorine disinfectant (sodium hypochlorite). Since chlorine is highly volatile, the risk of residue is low. However, ensure the product is specifically labeled as a chemical compatible or mixed formulation for food use. Once washed, vegetables should be consumed immediately or refrigerated promptly to prevent bacteria from flourishing in the lingering moisture.
